If you have not found yourself wandering down a sandy road that feels like it might rattle your teeth out of your head, hemmed in by desert brush so thick you cannot imagine what lies around the corner, then you have not traveled Baja.

As anyone venturing to the Pacific side of the American continents must know, upon arrival the best fish taco must be scouted. Don’t ask the concierge. Ask the locals.

The goal is complete immersion. You will share a long table with a local family who has brought their pet iguana for an outing. You will anchor yourself with a cold Pacifico, waiting. When your tacos arrive on a paper plate, you will wander to the communal topping bar. You will have no idea the precise components of the toppings offered. You won’t care. Give you taste buds an adventure.

The tacos are going to be so light that they melt in your mouth and you will race through the two ordered and realize that you hardly remember consuming them. They were air. Another is in order.
Slow. This one you savor.

Our new favorite taqueria is El Viejo in Los Barriles on the Sea of Cortez.
